Coleslaw

  • 🍽️ Servings: 8 – 10

Ingredients

  • 3/4 cup mayonnaise
  • 1/2 cup buttermilk
  • 3 tbsp lemon juice
  • 3 tbsp apple cider vinegar
  • 4 tbsp distilled vinegar
  • 1/3 cup olive oil
  • 1/4 cup granulated sugar
  • 1 1/2 tsp kosher salt
  • 1 tsp ground black pepper
  • 1 tsp celery seeds
  • 1/2 tsp onion powder
  • 1/4 tsp granulated garlic
  • 1/4 tsp mustard powder
  • One large head of green cabbage
  • One large carrot

Directions

  1. Finely shred, rinse, and drain the carrot
  2. Finely shred the cabbage (use a food processor if possible)
  3. Whisk together the mayonnaise, buttermilk, lemon juice, cider vinegar, distilled vinegar, olive oil, and sugar
  4. Add the salt, pepper, celery seeds, onion powder, and granulated garlic, and combine well
  5. Combine the shredded cabbage and carrot in a separate bowl
  6. Slowly add the dressing until it lightly coats the vegetables, and toss well. Add more dressing until it tastes good
  7. Refrigerate for at least an hour before serving

Baked pasta with broccoli, boiled eggs and scamorza cheese

Ingredients

  • 500g pasta
  • 500g broccoli
  • 4 eggs
  • 200g scamorza cheese
  • 400g béchamel
  • sage (optional)
  • parmesan cheese (optional)

Directions

  1. Boil water and add salt (a handful for every liter), put pasta inside.
  2. Boil broccoli and eggs for 10 minutes.
  3. While everything is boiling dice scamorza cheese, prepare a pan.
  4. Put a layer of béchamel.
  5. Put a layer of pasta.
  6. Put a layer of broccoli, diced scamorza cheese, pepper, salt.
  7. Go to step 4 and repeat until ingredients end.
  8. Add sage leafs on top (optional).
  9. Put the pan inside the (preheated) oven at 180°C for 15~20 minutes.
  10. End with 5~10 minutes of cooking with the grill function.

Spinach-Rice Casserole

  • 🍽️ Servings: 6

Ingredients

  • 4 cups Brown Rice, cooked
  • 2 lbs raw Spinach, chopped
  • 1 cup Onion, chopped
  • 2 cloves Garlic, minced
  • 3 Tbsp Butter
  • 4 Eggs, beaten
  • 1 cup Milk
  • 1 1/2 cups Cheddar, grated
  • 1/4 cup Parsley, chopped
  • 2 Tbsp Tamari
  • 1/2 tsp Salt (or more, to taste)
  • 1/4 cup Sunflower Seeds
  • A few dashes each – Nutmeg; Cayenne; Paprika

Directions

  1. Saute onions and garlic with salt in butter. When onions are soft, add spinach. Cook 2 minutes.
  2. Combine with all ingredients except sunflower seeds and paprika.
  3. Spread into buttered casserole dish and sprinkle sunflower seeds and paprika on top.
  4. Bake, covered, 35 minutes at 350F.
